I admit that Toriyama can be forgetful and its kinda annoying, but as far as trunks's hair goes, im pretty sure that was an intentional retcon.
Also, if you think Toriyama is such a hack, then why did you watch the series?
I grew up with Dragonball and Dragonball Z since the 90s. At that age is pretty hard to hate anything but I still watch DBZ to this day and even if the story is not meant to be great (Fighting Anime) it has consistency with itself and it makes sense.
Dragonball Super looks like it was written for 5 year olds! (I have a personal theory that Zeno is meant to represent the audience), nothing is consistent with anything and things happen for no reason at all (Big example is the new saiyans going from 0 to fighting Super Saiyan God SS because of an itch on their back). It's bad writting and it honestly has no redeeming qualities. Well I like Beerus as a character and I had a crush on Vados Japanese voice since Evangelion but that's about it!
And why do you think Trunk's hair color is intentional? Well nevermind that because I remember Toriyama admiting he forgot on an interview, along with SS2 and Android 18s hair color. Honestly this guy makes my blood boil.

I'm not saying that Toriyama isnt forgetful, because he is. Remember Launch? Toriyama didn't and she was totally dropped from the series as a result. The point I made about Trunk's hair is that its something too obvious for someone not to have mentioned it when he revealed Trunk's super design. Do you honestly think that Toriyama did that and no one said anything about it until after trunks appeared in the anime? Not to mention that the show had a redrawn flashblack and gave him a diffren hair color instead of just using the scene straight from Z, something they've done before ultiple times.
The inconsistency with saiyans and their transformations annoy me too, but that,s like the biggest example you can pull from. And I honestly can think of a brand new Super Saiyan that can match Super Saiyan Blue outside of Kefla and she went SSJ2, was a fusion and was a legendary super saiyan. Freiza admited that SSJ Caulifla was stronger then SSJ Goku back on Namek, but he still beat her pretty easily. Vegeta only went against Super Saiyan Blue against Cabba to prove a point. Kale is the legendary super saiyan, so she is meant to be unexplainably powerful.
As for Dragonball Super being written for 5 year olds, I can't really agree with you there. Goku Black's introduction was haunting, Freiza's tortue of Gohan is brutal, and Zeno's casual destruction of Universes( and murdering of all their inhabitants) is shocking. I admit that the plot is alot more straight forward then it was in Dragonball Z, but it pushes the nail in when it tries too. As someone who watched Dragonball Z in elementary school, I can tell you that I would not have been comfortable with any of that if I was five. The darkest things we saw in Z was Freiza beating up Vegeta and Vegeta barely qualified as an Anti-Hero back then.
