Kakarot follows the story nicely, but there´s some out of story stuff that happens and a cameo of two characters that have their own plot that´s irrelevant to Kakarot

Sparking Zero has a story mode that follows the plot, but from what I know there´s some stuff that can trigger a change.

There´s a game called Dragon Ball Xenoverse(and it´s squeal Dragon Ball Xenoverse 2), but the problem is since it´s all about fixing changes in history your gonna find changes there that weren´t in the original anime

I’d pick Kakarot cause it’s cheaper and is more story focused. You won’t get every fact but it isn’t a bad place to begin.
